Spring is the time to cook with nettles! My favorite recipe is a variation on the theme of spanakopita, a Greek spinach and feta pie. I like to use nettles and goat cheese instead. 

Garble the nettles, steam or saute them with onions and garlic until they're wilted, and layer with phyllo and goat cheese. Bake at 350 or so until light brown and crispy. Yum!
